What you will need

1 pork tenderloin

salt and pepper to taste

1/2 cup soft goat cheese (crumbled)

zest of 1 lemon

1 tablespoon basil (chopped)

1 teaspoon black pepper (ground)

butcher twine (I used unwaxed and unflavoured floss)

1 tablespoon olive oil

1/2 cup red wine

1/2 cup cherries (pits removed and chopped)

1 tablespoon balsamic vinegar

salt and pepper to taste
