What you will need

1 head romaine lettuce, washed and chopped (or 6-8 cups spring mix)

1 pint cherry tomatoes, sliced in half (or 2 large Heirloom tomatoes, diced)

1 red onion, sliced in thin rings

1/8 to 1/4 cups reduced balsamic vinegar (see below)

4 ounces ricotta salata, sliced and crumbled

3/4 cup balsamic vinegar
