Grilled Chicken Breasts with Satay Sauce

 

We turn the traditional appetizer of chicken skewers and dipping sauce into a main course by spooning the satay sauce over sliced grilled chicken breasts. This dish pairs well with Cucumber, Carrot, and Orange Salad.

What you will need

2 teaspoons light brown sugar

1/2 teaspoon chili powder

1/2 teaspoon garlic powder

1/2 teaspoon grated lime rind

1/2 teaspoon kosher salt

4 (6-oz.) skinless, boneless chicken breast halves

Cooking spray

1/4 cup creamy peanut butter

1 1/2 tablespoons rice vinegar

1 tablespoon water

1 tablespoon canola oil

2 teaspoons Sriracha chili sauce

1 teaspoon minced peeled fresh ginger

1 garlic clove, minced

1/4 cup cilantro leaves
