What you will need

For the brine:

2 quarts (8 c.) water

2 c. soy sauce

6 garlic cloves minced (I used a microplane grater)

1 T. grated fresh ginger

1/2 c. packed light brown sugar

4-6 chicken leg quarters, trimmed of excess fat and skin

For the glaze

For the glaze:

3 (6 oz.) cans pineapple juice

1/4 c. packed light brown sugar

1/4 c. soy sauce

1/4 c. ketchup

3 T. rice vinegar

4 garlic cloves minced

1 T. grated fresh ginger

1-2 t. Asian chili-garlic sauce (depending on how spicy you want it)
