Healthy Greek Chicken Gyro Platter

 

The easiest & quickest Greek Chicken Gyro Platter with (baked) fries, salad, Greek yogurt, and whole wheat pita bread. Healthy and delicious!

What you will need

4 chicken thighs, skinless & boneless

2 cloves garlic, minced

1 tbsp paprika

1 tbsp dried thyme

1 tsp ground coriander seeds

½ tsp red pepper flakes

salt and pepper to taste

juice and zest of 1 lemon

¼ cup olive oil

4 large russet potatoes, peeled and cut into sticks

2 tbsp olive oil or canola oil

½ tsp salt

2 cups mixed greens

2 tomatoes, cut into wedges

½ red onion, sliced

1 cup Greek yogurt

4 whole wheat pita breads
