What you will need

1 tablespoon finely grated lemon zest

1/2 teaspoon kosher salt

1/4 teaspoon freshly grated nutmeg

1 to 1 1/2 pounds peaches (about 6 medium peaches), pitted and cut into 1/4-inch-thick slices

6 ounces raspberries (about 1 1/4 cups)

1/2 cup fine cornmeal

1/2 cup oat flour

1/3 cup white rice flour

3 tablespoons granulated sugar

1 1/2 teaspoons baking powder

3/4 teaspoon kosher salt

1 1/2 cups heavy cream

1 tablespoon heavy cream

1 teaspoon demerara or other coarse sugar
