Hyderabadi Egg Biryani

What you will need

3 green cardamoms / Elaichi

¼ to ½ tsp shahi jeera

1 ½ cups long grain or basmati rice

4 to 5 hard boiled eggs

2 tbsp oil (suggested 3 tbsp.)

¾ cup thinly sliced onions layers separated (1 medium)

1 bay leaf

1 star anise

¼ to ½ tsp shahi jeera

1 black cardamom (optional)

4 green cardamom

2 inch cinnamon stick

4 to 6 cloves

1 strand mace

1 tbsp. ginger garlic paste

1 green chili slit

1 tsp biryani masala powder

¾ tsp red chili powder

salt as needed

¾ cup plus 1 tbsp yogurt / curd

handful of mint leaves / pudina and coriander leaves

3 tbsp. milk

pinch of saffron

1 tsp kewra water (optional)

¼ tsp red chili powder

generous pinch of biryani masala

very little salt
