Instant-pot Cheesecake for Two

 

The Instant Pot craze of the past few years shows no signs of slowing down, and with good reason--this electronic pressure cooker doesn't heat up the kitchen, and it makes quick work of braised meats, soups, yogurt, and desserts like cheesecake. If you're watching calories, this recipe is ideal, because it produces two neat little cheesecakes--no tempting leftovers.

What you will need

CRUMB CRUST

1/4 cup graham cracker crumbs

2 tablespoons melted salted butter, plus more for ramekins

FILLING

6 ounces cream cheese, at room temperature

1 teaspoon flour

1 1/2 tablespoons sour cream, at room temperature

2 1/2 tablespoons sugar

Pinch of kosher salt

1/2 teaspoon vanilla extract

1 teaspoon lemon zest

1 large egg yolk

STRAWBERRY TOPPING

3 strawberries

2 teaspoons sugar
