What you will need

2 cups all-purpose flour

1 1/2 teaspoons baking soda

2 teaspoons baking powder

1 teaspoon salt

2 teaspoons ground cinnamon

1/2 teaspoon ground ginger

2 cups sugar

1 cup extra-virgin olive oil

4 large eggs

2 teaspoons vanilla extract

2 cups grated carrots (from 3 to 5 carrots)

1 cup fresh pineapple, finely minced (crusted) and the juice (from 1/2 pineapple)

1 cup walnuts, toasted and chopped

1/2 cup Crisco

1/2 cup butter, at room temperature

3 1/2 cups confectioners' sugar, sifted

1/4 cup whole milk

1 1/2 teaspoons vanilla

1/2 teaspoon salt

1/3 cup tahini
