Pasta e Fagioli


There is nothing like a hot, comforting bowl of pasta e fagioli on a cold night! It is so hearty and satisfying.

What you will need

2 bay leaves

1 sprig thyme

1 sprig fresh rosemary

1 dash olive oil, plus additional for finishing

1/4 pound pancetta, diced small

3 garlic cloves, minced

2 carrots, peeled and sliced into thin rounds

1 onion, diced small

15 ounces cannellini beans (1 can)

15 ounces garbanzo beans (1 can)

1 quart chicken stock

1 pinch salt

1 pinch freshly cracked black pepper

1 1/2 cups small pasta shells

1/2 cup freshly grated parmesan cheese
