Picarones (peruvian Yam Fritters)

 

Picarones are a popular Peruvian dessert and look much like doughnuts made with sweet potatoes (yams). This version includes a honey figs compote to make them that much more delicious. Recipe courtesy Chef Ricardo Zárate. Used with permission.

What you will need

1 pound red yam

1 pound kabocha squash (or any seasonal squash)

1½ pounds all-purpose flour

3 tablespoons yeast

2 cinnamon sticks

4 cloves

3 tablespoons granulated sugar

Pinch of salt

2 eggs

1 cup honey

1 pound black figs (can be substituted for pineapple or other seasonal fruit)

2 cups water
