Poblano and Corn Stuffed Chicken

What you will need

2 boneless, skinless chicken breasts

1 poblano

1/2 yellow onion (diced)

4 cloves garlic (minced)

1/2 cup sweet corn (shucked or frozen)

1 tablespoon green chili powder

1 teaspoon dried oregano

1 teaspoon cumin

1/2 cup Monterrey Jack cheese (cubed)

1/2 cup plain Greek yogurt

salt and pepper

olive oil
