Pulled Pork Sandwich with Vinegar Slaw


The pulled pork is inspired by Tom Hirschfeld's Pulled Pork with Stubbs Sauce, and the cabbage slaw comes from lastnightsdinner's Smoky Pork Burgers with Fennel and Red Cabbage Slaw. (But you can use the recipes you like best.)

What you will need

6 1/2 pounds bone-in picnic shoulder (pork shoulder)

3 tablespoons kosher salt, plus extra for seasoning

1 1/2 tablespoons brown sugar

1 cup chicken or vegetable stock

2 tablespoons sherry vinegar

1 teaspoon apple cider vinegar

1 teaspoon Dijon mustard

1/2 teaspoon kosher or sea salt

1 tablespoon extra-virgin olive oil

1 cup shredded fennel bulb

1 cup shredded red cabbage

1 tablespoon chopped fennel fronds

Pickled jalapeรฑos, for serving

Buns or rolls, for serving
