Pumpkin and White Bean Turkey Chili with Kale and Pepita Salsa

 

A tasty and healthy fall pumpkin chili with white beans, smoky chipotle chilies and a hint of pumpkin pie spice.

What you will need

1 pound ground turkey (or chicken)

1 tablespoon oil

1 onion, diced

1 bell pepper, diced

3 cloves garlic, chopped

1 teaspoon cumin

1 (15 ounce) can white beans, rinsed and drained (or 1 1/2 cups cooked beans, from 1/2 cup dry)

1 (15 ounce) can diced tomatoes

2 cups pumpkin puree or 1 (15 ounce) can pumpkin puree

2 cups chicken broth or turkey stock or pumpkin ale

1 teaspoon oregano

1 teaspoon pumpkin pie spice

2 chipotle chilies in adobo (or to taste), chopped

salt and pepper to taste

4 cups kale, stems removed and coarsely chopped

1 handful cilantro, coarsely chopped

1 jalapeno, coarsely chopped

2 cloves garlic

1/4 cup pepitas, toasted

1/3 cup olive oil

2 tablespoons lime juice (~1 lime)

salt to taste
