Pumpkin Oatmeal Chocolate Chip Cookies

 

These are vegan, gluten free, nut free and the perfect fall lunch box snack!

What you will need

1 tablespoon ground flaxseed meal

2½ tablespoons warm water

2 cups oat flour (blend from 2¼ cups gf whole rolled oats)

1 cup gluten free whole rolled oats

1 teaspoon baking soda

1 teaspoon cinnamon

½ teaspoon sea salt

¼ teaspoon nutmeg

¾ cup canned pumpkin puree

¾ cup cane sugar

½ cup melted warm coconut oil

1 teaspoon vanilla extract

1 cup chocolate chips* (see note)
