Roasted Sweet Potato, Caramelized Onion, and Gorgonzola Quiche

 

This quiche is perfect for breakfast or also works at a great veggie main course for a dinner meal!

What you will need

Crust

1 1/2 cups whole wheat pastry flour

2 tablespoons natural cane sugar

3/4 teaspoon salt

1/2 cup cold butter, cubed

1/4 cup cold water

1 large sweet potato

2-3 large onions

3 tablespoons olive oil, divided

1 teaspoon salt

1/2-1 cup crumbled gorgonzola cheese

5 eggs

2 1/2 cups milk

1/2 teaspoon salt

1/2 teaspoon pepper

pinch nutmeg
