Scandinavian Almond Cake

 

Claimed by both the Norwegians and the Danes, this sugary almond-topped cake is a favorite for all.

What you will need

2.1 ounces sweet white sorghum flour (about 1/2 cup)

1.15 ounces brown rice flour (about 1/4 cup)

1.05 ounces tapioca flour (about 1/4 cup)

1 teaspoon xanthan gum

1/2 teaspoon baking powder

1/4 teaspoon salt

3/4 cup plus 1 tablespoon sugar, divided

5 tablespoons butter, melted and divided

2/3 cup unsweetened coconut milk

1 teaspoon almond extract

1 large egg

Cooking spray

1/3 cup sliced almonds
