Spaghetti Alla Bolognese

 

A flavour packed beef and tomato sauce served over pasta.

What you will need

1 medium onion, cut into small chunks

2 carrots, cut into small chunks

2 stalks celery, cut into small chunks

4 cloves garlic

8 ounces mushrooms

2 tablespoons olive oil

1 pound ground beef

2 tablespoons olive oil

1/4 pound pancetta or bacon, diced

1 cup red wine (or 1 tablespoon balsamic vinegar)

1 (28 ounce) can diced tomatoes

1 (5 ounce) can tomato paste

1 parmigiano reggiano rind (optional)

2 bay leaves

1 teaspoon oregano

salt and pepper to taste

1 pound spaghetti (gluten free for gluten free)

1 handful parsley, chopped

1/4 cup parmigiano reggiano, grated
