Spinach and Artichoke Mozzarella Bites


This ooey gooey spinach and artichoke mozzarella bites, served with marinara sauce, are a perfect way to welcome spring. Great as an appetizer to bring to a party or enjoy with a couple friends! Be warned...they're addictive ;)

What you will need

1 cup baby spinach

6oz jar marinated artichoke hearts, drained

1 1/2 cups shredded mozzarella cheese

3 ounces cream cheese, slightly softened

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup plain breadcrumbs

1 tablespoon dried oregano

3 tablespoons all purpose flour

1/4 teaspoon cayenne pepper

1/4 teaspoon salt, plus some for sprinkling

4 eggs

1 - 1 1/2 cups canola oil, or other neutral frying oil

marinara sauce, to serve
