Stuffed Chipotle Meatballs

 

"This recipe was handed down to me by my mother and grandmother," says Laura Granados of these lusciously saucy meatballs, each with a hidden surprise in the center. "It was one of my favorite dishes growing up."

What you will need

1 pound ground beef

1 egg

1 tablespoon uncooked long-grain white rice

1 1/2 teaspoons salt

1/2 cup finely diced onion

3 hard-boiled eggs, cut into quarters

1 1/2 cups chicken broth

1 cup canned plain tomato sauce

2 canned chipotle chiles in adobo sauce

1 garlic clove, minced

1 bay leaf

3 tablespoons chopped fresh cilantro
