Sweet Potato and Chocolate Panettone Bread and Butter Pudding

 

Break tradition with this fabulously festive bread and butter pudding, which uses brightly colored sweet potatoes.

What you will need

75 grams butter, softened

400 grams panettone, bread or brioche, cut into slices

8 Egg Yolks

50 grams Sugar

1 vanilla pod or a few drops of vanilla essence

2 Large Sweet potatoes

350 milliliters double cream

4 tablespoons sweet potato jam or orange marmalade

60 grams white chocolate, cut into chunks

60g grams dark chocolate, cut into chunks

1-2 tablespoons demerara sugar
