Turkey Wonton Soup


This recipe is a bit of a departure from the usual Chinese wonton

What you will need

1 tablespoon vegetable oil

1 heaping cup fresh shiitake mushrooms

1 tablespoon minced shallots

1 tablespoon minced fresh ginger

3 cloves garlic, minced

1/3 cup Shaoxing wine or dry sherry

1 cup low-sodium chicken broth

1/3 cup dark soy sauce

1/3 cup packed dark brown sugar

2 tablespoons cornstarch

1 tablespoon Shaoxing wine or dry sherry

1 ground ground turkey, preferably dark meat

1/2 cup thinly sliced scallions

2 tablespoons minced fresh ginger

2 tablespoons minced garlic

2 tablespoons minced lemongrass

1 tablespoons soy sauce

1 teaspoon toasted sesame oil

1/2 teaspoon five-spice powder

1 large egg, beaten

8 cups (2 quarts) low-sodium chicken broth

2 tablespoons toasted sesame oil

2 tablespoons rice vinegar

1/4 cup thinly sliced scallions, for garnish
