Vanilla Buttermilk Birthday Cake

 

Gently sweet and moist, this vanilla layer cake uses applesauce and tangy buttermilk to cut back on much of the fat in a traditional birthday cake.

What you will need

3/4 cup (1 1/2 sticks) unsalted butter, softened, divided, plus more for the pans

3 cups whole wheat pastry flour, plus more for the pans

1 1/2 cup granulated sugar

1/2 cup unsweetened applesauce

1 tablespoon plus 1 teaspoon pure vanilla extract, divided

4 eggs

1 1/2 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon fine sea salt, divided

1 cup lowfat buttermilk

2 cups powdered sugar

2 tablespoons nonfat (0%) milk
