Vegetable Fried Rice

 

This is a totally vegetarian vegetable fried rice, which is just as good as a fried rice made with meat. The addition of dark (or mushroom) soy sauce gives it a rich, darker color and great flavor.

What you will need

½ small red onion, diced

¼ cup diced carrots

¼ cup sliced fresh mushrooms

¼ cup diced green bell pepper

¼ cup fresh green peas

1 scallion, chopped

½ cup mung bean sprouts

2 to 3 cups cooked white rice

2 eggs

2 tablespoons oil

2 teaspoon dark soy or mushroom soy sauce

1 teaspoon salt

1 teaspoon light or seasoned soy sauce

pinch of white pepper
