Vegetarian Lunch, Three Ways

 

1 post, three vegetarian lunches featuring easy cream cheese veg bagel, asparagus + hummus toast, and a delicious garlicky kale grilled cheese sandwich.

What you will need

1 cup loosely packed spinach

2 slices of large tomatoes

1/2 cup thinly sliced cucumbers

1/4 cup thinly shaved onions

1/2 cup shredded carrots

1/2 just-ripe avocado sliced

2 whole wheat bagels sliced in half

4 tablespoons Arla Herb and Spice Cream Cheese

2 cups destemmed packed kale

2 teaspoons olive oil

2 cloves garlic minced

4 slices whole wheat bread

1 tablespoon softened butter

4 slices Arla sliced gouda cheese

1/4 pound asparagus

2 teaspoons olive oil

Pinch of salt

2 slices of bread

3 to 4 tablespoons hummus

2 slices Arla Sliced Havarti
