Zucchini Banana Blueberry Muffins


Whole wheat muffins made with zucchini, banana, and blueberries. These healthy muffins are great for breakfast or as a snack.

What you will need

1 1/2 cups white whole wheat flour

3/4 teaspoon baking powder

3/4 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

2 medium ripe bananas, mashed (about 1 cup)

1/4 cup granulated sugar

1/4 cup packed light brown sugar

1 large egg

1/3 cup melted coconut oil, cooled to room temperature

1 teaspoon vanilla extract

1 cup shredded zucchini

1 cup blueberries, fresh or frozen

2 tablespoons turbinado sugar, optional
