Gather all ingredients.
4
Season the chicken with the salt and pepper. Rub the seasonings into the chicken on both sides.
5
Add chicken to a pot of water and then turn on the heat. Bring to a boil.
6
Once the water boils, reduce the heat to a simmer and let cook for about 10 minutes. Depending on the size of your chicken breasts, the cook time will vary. The best thing to do is use a thermometer to check the internal temperature of the chicken.
7
Once the chicken just hits 165°F pull it from the water to cool.
8
Use two forks to shred the chicken.
9
Stir the barbeque sauce into the shredded chicken.
10
Keeping the stem side intact, cut the cabbage in half and slice into thin shreds.
11
Wash and grate the carrots and put into the bowl with the cabbage.
12
Add the mustard, apple cider vinegar, sugar, salt, and pepper to the mayonnaise.
13
Stir the sauce and add to the cabbage and carrots.
14
Toss the cabbage with the sauce to combine.
