3 Ingredient Carrot Herb Pinwheels
Try to get the largest carrots you can for this simple 3 ingredient but elevated snack!
What you will need
2 lbs Carrots
.25 oz Fresh Chives
8 oz Whipped Cream Cheese
1/4 tsp Salt

Gather ingredients, wash carrots and chives.

Wash the chives and pat gently in a paper towel to dry. Bundle the chives in your fingers holding them together on the sides with your thumb and pinky finger. Using a very sharp knife cut off any dried ends and slice the chives very thin all the way to the tops.

Put the whipped cream cheese into a mixing bowl and add the chopped chives and a salt. Mix together until incorporated.

Peel the outer layer of the carrot and then continue peeling on one side to create carrot ribbons. Peel carrots as needed to use up the cream cheese.

Spread a thin layer of cream cheese on the carrot ribbon and roll with the cream cheese inside.

Continue with all the carrot ribbons that are large enough to roll!
