Bacon & Tomato Egg Salad Stuffed Avocados
Calling all avocado lovers, this decadent snack is a great snack or lunch!
What you will need
2 Hard Boiled Eggs
1/2 cup Cherry Tomatoes
3 Tbsp Mayonnaise
2 Avocados
4 Slices Bacon
pinch Salt
pinch Black Pepper
1 Lemon
0.5 oz Chives

Gather and portion ingredients.

Wash and cut the tomatoes in half.

Finely chop the chives.

Chop the eggs into about 1/4 inch cubes.

Chop the bacon into one inch pieces and fry in a skillet until crispy.

Cut around the pit of the avocado, twist it open and remove the pit with the knife. Scoop out some of the center to fill the avocado.

Squeeze a bit of lemon juice over the avocado halves to prevent browning and sprinkle with a pinch of salt.

Add the scooped out avocado and the mayo to a medium mixing bowl.

Mix the chopped hard boiled eggs into the mayo mixture.

Season with a pinch of salt and pepper. Add a squeeze of lemon juice (about 2 tsp), and the chopped chives.

Add the tomatoes and bacon to the bowl and mix together.
