Balsamic Berry Bruschetta
With Burrata
This sweet and savory appetizer is perfect to savor the flavor of summer. I used frozen berries, but you can also use fresh!
What you will need
2 ½ cups frozen Mixed Berries
3 Tbsp Balsamic Vinegar
4 Tbsp Olive Oil
Sea Salt
Black Pepper
.5 oz Fresh Basil
8 oz Burrata Cheese
1 Baguette
1/4 cup Olive Oil (for brushing)

Gather and portion ingredients.

Set oven to 400 °F

Add the berries to a small rimmed baking pan. Top with olive oil and balsamic.

Season with a few pinches of salt and pepper. Stir to combine.

Roast the berries in the oven set to 400 °F for 15 to 20 minutes or until bubbling and starting to caramelize around the edges. If using fresh berries, stick to 10-15 mins of roasting time.

Slice the baguette at an angle to create larger slices.

Once berries are bubbling, breaking apart, and the syrup that they produced begins to thicken slightly, remove from the oven.

Set oven to broil

Lay the bread slices out onto a rimmed baking sheet and brush with olive oil. Broil for about 3-5 minutes or until lightly browned.

Add a spoonful of burrata cheese to each toast.

Top the toasts with a spoonful of berries and their juice. Add basil for garnish if you like.
