Braised Celery with Fennel Salad
This dish is for the celery fans out there since it really celebrates the many textures and flavors that celery brings to the table with the almost creamy braised celery, and a fresh salad made with the greens on top.
What you will need
2 Tbsp Butter
1/2 cup Broth
1 bunch Celery
1 Bulb Fennel
1 Lemon
.25 oz Fresh Dill
pinch Salt
Olive Oil
Black Pepper

Gather and portion ingredients. Wash the fennel and celery thoroughly.

Cut the ends off of the celery stalks, saving the celery leaves for the salad. Cut into 2-3 inch angled pieces.

In a large skillet over medium heat, melt the butter and add the celery.

Season the celery with a generous pinch of salt and pepper and saute until the celery just begins to soften, about 5 minutes.

Add the broth of your choice and turn the heat to medium low. Cover and let simmer for about 5 more minutes

Pick a small handful of the fennel leaves and dill leaves and give them a rough chop.

Add a small handful of the leaves from the celery stalks.

Remove the green leaves of the fennel bulb and cut off the tough root end. Finely slice the fennel bulb with a mandolin or knife.

Add 1-2 Tbsp of olive oil, juice from half a lemon, and a pinch of salt and pepper to the bowl with the fennel, fennel leaves, dill, and celery leaves.

Toss the salad to incorporate dressing.

Remove the lid from the celery and let simmer for about another 5 minutes to let the sauce reduce a bit. You are looking for the celery to be soft but still maintaining some fresh green color.

Add the braised celery to a shallow bowl and top with the fresh fennel salad. Serve while hot and enjoy!
