Butter & Dill Roasted Radishes

This recipe is perfect for radish season. Not only are radishes cheap, they are super filling and become very sweet when roasted. Feel free to leave the greens on when you roast as well since they are edible!
What you will need
2 Tbsp Butter
Olive Oil
.5 oz Fresh Dill
3 bunches Radishes
3 cloves Garlic
Salt
Black Pepper

Gather and portion ingredients. Wash radishes.

Set oven to 425°F

Halve the radishes and cut off the greens if you prefer.

Peel and finely grate or finely chop the garlic cloves.

Drizzle the radishes with olive oil and season with a couple pinches of salt and black pepper. Add the garlic and mix in.

Slice the butter into thin pats and top the radishes.

Roast the radishes in the oven for about 20-25 minutes or until radishes are softened.

Finely chop the dill and mix into the radishes.
