Cajun Shrimp Skillet
Whip up a cajun inspired shrimp skillet with in a pinch with shortcut cajun seasoning you can find in most grocery stores. Frozen okra works here as well as fresh, but be sure to thaw it and pat it dry before throwing in the pan. Try this over rice or even pasta!
What you will need
1/2 tsp Salt
2 Tbsp Cajun Seasoning
1/2 tsp Black Pepper
3 Tbsp Olive Oil
1/2 lb Okra
1 Red Bell Pepper
1 Red Onion
1 lb Raw Shrimp
1/2 Lemon
2 Tbsp Unsalted Butter
2 Tbsp Fresh Parsley, optional

Gather and portion ingredients.

Cut the ends off of the onion, cut in half, peel and slice into thin wedges.

Chop the bell pepper into strips or squares.

Add the olive oil to the skillet over high heat. Add the onion.

When the oil is nice and hot, add the okra. If using frozen, it will be hard to avoid some of the slime but frying at a high heat will help. Saute the onion and okra for a few minutes until the onion is soft, some dark browning starts to develop, and the okra slime cooks off. Turn down the heat to medium.

Add the bell pepper to the skillet.

Season with salt, pepper and cajun seasoning. If your cajun seasoning is salt-free, you may need a bit more salt. Just give it a taste and adjust.

Add the shrimp to the skillet and cook until light pink.

Remove the skillet from the heat and add the butter to the pan and squeeze the juice from half a lemon over the shrimp. Stir until butter is melted.

Sprinkle with chopped parsley if you like!
