A simplified version of the French classic Coq Au Vin. And all in one pot.

What you will need

3 Carrots

1 Yellow Onion

4 cloves Garlic

4 oz. Bacon

2 lb Chicken Thighs

8 oz. Sliced Mushrooms

2 Tbsp Chicken Bouillon

1 cup Red Wine

2 sprigs Fresh Thyme

2 Bay Leaves

1 1/2 cups Water

3 Tbsp Unsalted Butter

Peel the carrots and split them in half lengthwise. Chop them to 1/4" chunks.
