This chilled blended pea soup is SO good for the summer. It combines the flavor of fresh peas and basil. The little bit of yogurt creates a delicious sweet, tangy and savory flavor.
What you will need
3 Tbsp Unsalted Butter
1 Onion
6 cups Peas
2 cups Vegetable Broth
2 Garlic Cloves
.5 oz Fresh Basil
2 Tbsp Olive Oil
Salt
Black Pepper
1 cup Plain Greek Yogurt

Gather and portion ingredients.

Cut the onion in half and peel keeping the root end intact. Make a few cuts into the onion with the knife parallel to the cutting board. Then slice into strips and dice.

Melt the butter in a skillet and add the chopped onions.

Saute chopped onion until lightly browned.

Add the peas and the vegetable broth to the pan with the onion. Let the peas thaw. If you are using fresh peas feel free to skip this step and go straight to the blender.

Add the peas, onion, and broth to the base of a blender and add the yogurt, garlic, and the leaves of fresh basil.

Add a generous pinch of black pepper and salt. Add the olive oil and blend until smooth.
