Creamy Scalloped Potatoes

What you will need
1 Yellow Onion
2 cloves Garlic
¼ cup Unsalted Butter
¼ cup AP Flour
½ tsp Salt
¼ tsp Ground Black Pepper
2½ cups Milk

Slice potatoes thinly. This should yield about 8 cups worth of sliced potatoes.

For sauce, in a medium saucepan cook diced onion and crushed garlic in hot butter until tender. Stir in flour, salt and pepper. Add milk all at once. Cook and stir over medium heat until thickened and bubbly.

Preheat oven to 350°F. Coat a 3-quart rectangular baking dish with cooking spray. Arrange half the sliced potatoes in the prepared baking dish. Top with half the sauce. Repeat layers.

Bake, covered, for 45 minutes. Uncover and bake for 40 to 50 minutes more or until potatoes are tender. Let stand, uncovered, for 10 minutes before serving.
