What you will need
1 lb filet mignon (or the meat you have available)
1 onion
2 small leeks
1 tbsp Thyme
1 tsp Nutmeg
1 cup Heavy whip cream (or creme fraiche)
Salt & pepper
2 tbsp butter

Melt the butter and brown the meat, 3 minutes per side.

Add the thyme on top and cover if you want the meat cooked well. Filet mignon works great rare, but it depends on your familyโs taste

Remove meat from the pot and set aside

Cook the onions in the same pot, you may add extra butter if there isnโt enough oil left in it

Add the leeks, stir well and add some water to help cooking and getting that tasty grease from the bottom of the pot

Add the cream and stir well

Season with nutmeg, salt and pepper

Add the meat back to the pot, stir well and cook it covered for a couple of minutes just to re-heat the meat.
