Fillet of Sole
Joe's Style
A popular dish that's common at Italian American restaurants. I love just about any white fish prepared with a thin egg batter like this.
What you will need
1.5 lb sole fillets
Salt and pepper to taste
1 cup flour
3 eggs
Olive oil as needed
How to cook

Clean up your fish. Feel around for bones. Slice off any extra skin, rogue scales, or otherwise weird shit.

Season the fillets on both sides with salt and pepper.

Beat up some eggs in a bowl like if you were going to make scrambled eggs.

Dust each fillet to coat completely with flour

Heat some oil in a pan. Dunk each fillet in egg and fry to golden brown. Kinda like fish french toast almost.

When one side is cooked, use a fish spatula to flip gently.
