Fresh Cranberry Beans
With King Trumpet Mushrooms and Japanese Eggplant
Started as a side dish, but my beans needed some sparkle. Came together nicely.
What you will need
1/2 lb king trumpet mushrooms.
2 large japanese eggplant
1 medium yellow onion
How to cook

Get the beans cooking.

Quarter the eggplant lengthwise and dice.

Dice the king trumpets.

Peel and slice the yellow onion.

Get some oil warmed up over medium heat. Add your onion. Let it cook down for a few minutes.

Add the mushrooms

Alright! Just a little bit of caramelization going on. Time to add the eggplant.

When it all comes together, onions, mushrooms, and eggplant all cooked down soft, add the beans.

Cook off the extra water. Season with salt and pepper, and set it out for the crew.
