Fruit Salad Lettuce Cups
Nectarines, strawberries, avocado, crispy lettuce and fresh heirloom tomatoes really embody the flavors of summer. Why not all in one bite!
What you will need
1 Slicing Tomato
4 oz Strawberries
1 Nectarine
2 Tbsp Pesto
1 Avocado
1 Lemon
1 head Butter Lettuce

Gather ingredients and wash produce.

Cut the sides off of the nectarine and dice small.

Remove the stem and dice the tomato.

Cut off the stem of the strawberries then slice and chop.

Add everything to a mixing bowl and add the pesto and the juice of half of a lemon.

Split open the avocado by slicing around the pit. Remove the pit and dice.

Wash and lay out leaves of butter lettuce on a platter. Fill each leaf with salad and top with avocado.
