What you will need
Apple Chips
1/2 Tbsp Ground Cinnamon
3 Apples
Tuna Salad
2 cans Tuna
1/2 cup Mayonnaise
3 Tbsp Dill Pickle Relish
1/2 Loaf Wheat Bread
4 Carrots

Gather and portion ingredients for lunch box and apple chips. Drain water or oil from canned tuna.
Make Apple Chips

Preheat air fryer to 350°F
Turn on the air fryer to 350 °F to warm it up to temp before adding the apple slices.

Wash and thinly slice apples on a mandolin.

Either remove the seeds from the apples or cut out the core slices with a small cookie cutter! If you have an apple corer, you can core the apple before slicing as well.

Add the apple slices to a mixing bowl and coat with cinnamon.

Cook the apples in 3 batches, about one apple per batch. Layer and stagger the apple slices. You will fry them for a total of 12-15 minutes per batch. Start by frying for 5 minutes and then stirring.

After 5 minutes, toss the apple slices with tongs. Cook for another 5 minutes. After 10 minutes, remove any chips that look crispy and continue cooking for 2-5 minutes checking every minute to avoid burning. Repeat with the rest of the apples.

Meanwhile, add tuna, mayonnaise, and dill relish to a mixing bowl and mix to combine.

Add the tuna salad between the bread and cut with any fun shaped cookie cutters you have on hand!

Peel and cut carrots and add them to the lunchbox along with the apple chips and tuna sandwiches.
