Ginger Soy Chicken & Garlic Noodles Meal Prep
What you will need
MARINADE
1/4 cup brown sugar
3 Tbsp soy sauce
2 cloves garlic, minced
1 Tbsp fresh ginger, grated
freshly cracked pepper (15 turns)
1 Tbsp (sesame) cooking oil
CHICKEN
8 thighs or 4 breasts
GARLIC NOODLES
6 oz angel hair, cooked
2 - 3 zucchinis, zoodled
4 cloves garlic, minced
1/2 bunch green onions, sliced
4 Tbsp butter
2 tsp soy sauce
2 Tbsp brown sugar
1 tsp sesame oil
2 Tbsp oyster sauce
STEAMED BROCCOLI
1 head of broccoli, steamed

Marinade
Mix marinade. If using breasts, pound chicken with bottom of a canning jars so they're all the same width. Cut in half from the side if too big. Season with a little say and pepper. Lay in maribade and turn to coat. Let sit for at least 30 minutes up to 24 hours.

Cook Chicken
Heat large skillet to medium-high. When its quite hot, add oil. Turn to medium. Add chicken breasts. Cook for about 1 minute. Flip chickens over. Turn heat to low. Cover the pan and cook on low for 10 minutes. Remove from heat and let sit for 10 minutes. Don't touch the cover until now. Take it out and let it rest.

Make Glaze
Pour leftover marinade into skillet and over medium, bring to full boil. Whisk as it boils to dissolve any brown bits. Reduce to a thick glaze. Add chicken & turn to coat. Garnish with green onions and sesame seeds.

Noodle Sauce
Mix 2 Tbsp oyster sauce, 2 Tbsp brown sugar, 2 tsp soy sauce, 1 tsp sesame oil in a bowl.

Saute Garlic and Onions
Melt 4 Tbsp butter in large skillet over medium-low heat. Once butter is melted and bubbly, add garlic & onions and saute until soft and fragrant (1 - 2 minutes)

Mix Garlic Noodles
Remove skillet from heat. Add drained pasta, zoodles, and oyster sauce mixture & stir well. If the pasta is stiff or sticky, sprinkle small amount of hot water to loosen pasta.

Steam Broccoli
Chop broccoli and steam in glass bowl with inch of water. Cover with seran wrap and mucrowave for 5 minutes, stir, then microwave for 3 minutes and leave it covered.
