Gluten Free Banana Bread
Gluten free bread is a struggle. But this is a decent beginner recipe. The real trick is to really beat the eggs until they're as thick as a loose hollandaise.
What you will need
3 Eggs
3 Bananas
1 tsp Vanilla Extract
1/4 cup Coconut Oil
1/4 cup Almond Milk
2 ½ cups Almond Flour
½ cup Ground Flaxseed
1 tsp Baking Soda
1/2 cup Chocolate Chips
½ tsp Salt

Preheat oven to 350°F

Crack the eggs into a large mixing bowl. Beat the eggs until they're thick enough to leave a ribbon when the beaters are withdrawn. You'll probably want to use a hand mixer or a stand mixer for this, or your whisking arm might get a little tired.

Add the bananas.

Add the vanilla.

Add the coconut oil.

Add the almond milk.

Add the almond flour.

Add the ground flaxseed.

Add the baking soda. Mix well.

Finally, fold in the chocolate chips.

Prepare a loaf pan. I like to line my baking pans with parchment. This really helps when you need to release the loaf from the pan later. But you should be fine with just a little oil or butter rubbed on the pan.

Pour the batter into the prepped loaf pan and smooth out the top.

Bake for about 50-70 minutes, or until a skewer inserted at center withdraws clean.
