Granola Brittle
This homemade crispy granola is perfect over yogurt but can also be packed in a baggie to munch on-the-go!
What you will need
3 Tbsp Coconut Oil
1 cup Maple Syrup
1/2 tsp Salt
2 tsp Vanilla Extract
3 cups Oats
3/4 cup Sliced Almonds
1 cup Shelled Sunflower Seeds
2/3 cup Dried Cranberries

Gather and portion ingredients.

Set oven to 350°F

Add the oats, sunflower seeds, almonds, and cranberries to a large mixing bowl.

Add the coconut oil and maple syrup to a small saucepan.

Add the vanilla extract and salt as well. Bring up to a boil for one minute.

Pour the boiling syrup over the dry ingredients and stir to combine.

Line a rimmed baking sheet with parchment paper and spread the granola into an even layer.

Bake for approximately 15 minutes or until browned. Let cool completely before breaking into pieces. Store in an air-tight container.
