How to Brunoise Jalapeño
Basic cooking technique
These spicy little jalapeño brunoise cubes are great in all kinds of dishes. Use them to spice up a stew or a mignonette or as a garnish for a cold appetizer.
What you will need
1 jalapeño
1 sharp knife

Slice off the stem and cut the jalapeno in half from tip to stem.

As you press the edges down gently, slice out the seeds and inner membrane.

Take each half, inner-side facing up, and slice into thin strips. This is called a julienne cut.

Now you can group the thin slices, rotate the pile 90 degrees and slice again, to brunoise.

Yields nice little cubes of jalapeno.
