Fresh dill has a pleasant flavor with notes of lemon and fennel. Great with fish and other bright and delicate ingredients.

The stem of dill is tough and doesn't contrast well with its delicate fronds, so I recommend discarding it. Group the fronds and pull them from the stem.
3
Bunch up the fronds and roll them into a tight bundle.
4
Slice finely. This is how I would generally recommend using dill. The texture is pleasant and the short fronds show up nicely in sauces, dressings or marinades. But you can certainly chop it more finely if you like.
5
to chop more finely, scrape the dill together into a pile. With one hand over the handle and the other gently pinning the blade, rock your knife rapidly, guiding it through the pile. Scrape the pile back together and repeat until you reach the desired fineness.
