It takes a little more effort to chop thyme fresh, than to use the dried stuff, but herbs are so much better when they're fresh. Totally worth it.

What you will need

1 bunch thyme

 the stem in one hand and use the opposite hand to pull the stem through your fingers. Standard thyme has a softer stem that can be eaten.

Strip the thyme leaves from the stem. With wild thyme, you can simply pinch the stem in one hand and use the opposite hand to pull the stem through your fingers. Standard thyme has a softer stem that can be eaten.

k your knife rapidly up and down while moving it through the pile of thyme. Repeat until finely chopped.

With your free hand pinning the nose of the blade to the cutting board, rock your knife rapidly up and down while moving it through the pile of thyme. Repeat until finely chopped.
