How to Cook Beet Greens
don't throw away those beet tops
This is a simple way to prepare and cook fresh beet leaves. A lot of cooks just throw these leaves away, but they're easy to cook and taste very similar to chard.
What you will need
1 bunch of beet greens
1/2 white onion, sliced
2 tbsp (30 ml) olive oil
1 tsp (6 g) salt

Take off the beet tops and then separate the leaf from the stem. Wash both thoroughly.

Remove the ends of the stem on either side and then chop the stems.

Heat some oil in a pan over medium.

Add sliced onion. Stir.

Add the chopped beet stem.

Cook this down until both the onion and beet stem are tender, stirring frequently. As the greens become tender, season with a little salt and pepper. If you like, you can add a splash of vinegar or wine and reduce at the end of cooking.
