Cut off the base of the bok choy where the leaves come together. This will separate the leaves and remove the tough parts of the vegetable.

Hold the leaves in one hand and chop into 1 inch chunks. If the bok choy is smaller, you can throw in whole leaves or chop into larger chunks depending on what you prefer. Throw in at the last few minutes of a stir fry or soup!
