Cauliflower should have a creamy white color. Look for densely packed florets that are free of blemishes, browning or wet spots. Find one with fresh green leaves as well.

Cut the cauliflower in half.

Cut a triangle shape into the stem to remove the florets.

Once the stem is removed the florets should break apart. Use a knife to cut any larger ones in half.
